Duck with pineapple
Ingredients :
1.5 kg (3lb) duck
1 tbsp oil
1/2 cup water
2 tbsp berbecue sauce
2 tbsp white vinegar
2 tbsp dry sherry
2 tbsp soy sauce
1/4 five spice powder
Sauce:
1 small ripe pineapple
2 tbsp oil
2.5cm ginger
1 clove garlic
3/4 water
3 tbsp cornflour
2 tsp barbecue sauce
1 tbsp soy sauce
2 tbsp dry sherry
1 tbsp white vinegar
Preparation
1. Place duck in the baking dish, pour over remaining combined ingredients, place duck in hot oven 20 minutes or until light golden brown, spoon marine over frequently. Cook a further 60 minutes, spoon marinade over frequently. remove dish from oven , allow to become cold.

4. Heat oil in wok or pan, add peeled and grated ginger and crushed garlic, saute for 1 minutes. Add duck , toss over high heat for 2 minutes or untillduck is heated through. Add Combined water, cornflour, barbecue sauce, soy sauce, sherry, crumbled stock cube and vinegar. Toss constantly untill sauce is boiling. Add pineapple pieces, toss for a futher 2 minutes or untill sauce .
